Home Made Muesli: Makes 14 Servings; 175 Cals per serving
250g (9oz) Porridge oats
75g (3oz) Whole wheat flakes
50g (2oz) Bran Buds
75g (3oz) Sunflower seeds
175g (6oz) Sultanas
175g (6oz) Dried apricots, pears, figs or peaches cut small
1) Mix together the porridge oats, whole wheat flakes, bran buds, sunflower seeds, sultanas and dried fruit (The dried fruit can be mixed or varied according to taste and availability. Keep ratio of grains to fruit about the same.
2) The dry muesli will keep fresh for several weeks if stored in an airtight container.
Home Made Dried Fruit Compote: Serves 6; 80 Cals per serving
50g (2oz) Dried apple rings
50g (2oz) Dried apricots
50g (2oz) Dried figs
300ml (half pint) Unsweetened orange juice
300ml (half pint) Water
25g (1oz) Hazelnuts
1) Cut the dried apples, apricots and figs into chunky pieces and place in a bowl.
2) Mix together the orange juice and water and pour over the fruit in the bowl. Cover and leave to soak in the fridge overnight.
3) Next day, spread the hazelnuts out in a grill pan and toast under a low to moderate heat, shaking the pan frequently, until the hazelnuts are browned evenly.
4) Tip the hazelnuts into a clean tea towel and rub them whilst they are still hot to remove the skins.
5) Chop the hazelnuts roughly using an automatic chopper or large chopping knife. Sprinkle over the compote just before serving.
Vegetable Vitality Drink: Serves 1; 293 Cals per serving
50g (2oz) Shredded coconut
300ml (half pint) Boiling water
225g (8oz) Carrots
Juice of half a lemon
5ml (1 tsp) Wheatgerm oil
1) Put the coconut in a heat proof jug, pour on the boiling water and stir well to mix. Leave to infuse for 30 minutes.
2) Meanwhile scrub the carrots with a stiff vegetable brush to remove any soil from their skins. Grate into a blender or food processor, add the lemon juice and blend until the carrots are broken down into a pulp.
3) Strain the carrot pulp through a sieve into a jug, then strain in the milk from the coconut. Add the wheatgerm oil and whisk vigorously to combine. Pour into a long glass and serve immediately.
Yogurt Vitality Drink: Serves 1; 280 Cals per serving
1 Small banana
10ml (2 tsp) Wheatgerm
Juice of one orange
150ml (quarter pint) Natural yogurt
1 Egg yolk
1) Peel the banana and slice straight into a blender or food processor.
2) Add the wheatgerm, orange juice, yogurt and egg yolk and blend into a smooth mixture. Pour into a long glass and serve immediately.
